Yield: 4 appetizer portions; dip only
Estimated timing: Estimated 15 minutes preparation, 25-30 minutes roasting and 10 minutes cooling; about 55 minutes total. Untested estimates.
Ingredients
- 200 g carrots, peeled and cut into 1 cm slices
- 1 tablespoon olive oil
- 240 g canned chickpeas, drained and rinsed
- 30 g tahini, stirred smooth
- 30 mL fresh orange juice
- 1 teaspoon finely grated orange zest
- 1 tablespoon fresh lemon juice
- 40 mL drinking water
- 1/4 teaspoon ground cumin
- 1/8 teaspoon fine salt
Method
Roast carrots
Heat oven to 200 C / 400 F. Toss carrots with oil and spread on a tray. Roast 25-30 minutes, turning once, until soft when pierced. Cool for 10 minutes before blending.
Blend
Put carrots and any tray oil into a food processor with chickpeas, tahini, orange juice, zest, lemon juice, water, cumin and salt.
Smooth the dip
Process until smooth enough to spoon, stopping the machine before scraping down the sides. Texture depends on chickpeas and processor; no unmeasured extra oil or water is specified.
Serve
Divide into four appetizer portions. Serve promptly; no bread, crudites or garnish is included in the yield. Refrigerate promptly if not serving immediately; no storage-life promise.
Allergens and handling
Contains sesame. Check tahini and canned chickpea labels for allergens and cross-contact. No allergen-free claim.
Use washed produce and clean utensils; follow ingredient label storage instructions. Refrigerate perishable components promptly. No recipe-specific shelf-life promise.
Trial checks
- Record carrot softness and drained chickpea weight.
- Check processor texture, orange bitterness and dip consistency; log measured changes.
