  • 60 mL dry vermouth
  • 15 mL elderflower liqueur
  • 30 mL brewed chamomile tea, cooled
  • 60 mL chilled sparkling water
  • 100 g serving ice

Preparation and method

  1. Brew a single-ingredient food-grade chamomile tea according to its package instructions. Cool, then measure 30 mL; use promptly and do not assign a storage life.
  2. Fill the wine glass with ice. Add vermouth, elderflower liqueur and cooled tea; stir gently.
  3. Add sparkling water and stir once gently. Add optional lemon peel and serve immediately.

Allergen review

Vermouth may contain sulfites; inspect liqueur and tea labels. Chamomile can cause reactions in people sensitive to related plants; do not present it as universally allergy-safe.
