Make it
Yield: 2 light-main servings; 2 toasts per person
Estimated timing: Estimated 10 minutes preparation and 15 minutes cooking; 25 minutes total. Untested estimate.
Ingredients
- 300 g chestnut or cremini mushrooms, cleaned and sliced
- 4 slices sourdough bread, about 40 g each
- 80 g soft spreadable goat cheese
- 1 tablespoon olive oil
- 10 mL balsamic vinegar
- 1 small garlic clove, peeled and minced
- 6 g fresh chives, washed and sliced
- 1/8 teaspoon fine salt
- 1/8 teaspoon ground black pepper
Method
Brown mushrooms
Heat olive oil in a wide skillet over medium-high heat. Add mushrooms and cook for 8-10 minutes, stirring occasionally, until their released liquid evaporates and the edges brown. Work in two batches if the pan is crowded.
Finish the pan
Reduce heat to medium. Add garlic, salt and pepper and cook for 30 seconds. Add balsamic and stir for another 30-60 seconds, until it coats the mushrooms rather than pooling in the pan.
Toast bread
Toast bread in a toaster or under a watched grill until crisp at the edges. The timings assume bread can toast while mushrooms cook.
Build
Spread each slice with 20 g goat cheese. Divide the mushrooms over the four slices and scatter with the measured chives. Serve promptly, two slices per person. No extra oil drizzle or side salad is included.
Allergens and handling
Contains wheat and milk. Bread may contain other allergens; balsamic vinegar may contain sulfites. Check labels and cross-contact. No allergen-free claim.
Use washed produce and clean utensils; follow ingredient label storage instructions. Refrigerate perishable components promptly. No recipe-specific shelf-life promise.
Trial checks
- Record bread slice size and mushroom moisture.
- Check mushroom browning and balsamic acidity; log measured changes.
